This amazing salad is one of my absolute favorites. It's über healthy -- vegan, gluten-free, protein packed, has it's healthy fats and is super easy to make. Although very similar to the Quinoa Salad I shared, the flavors are surprisingly different. It's another great dish to serve at a party. Chad and and I enjoy it as a meal and then I will usually eat the left-overs for lunch the next day.
To make, combine and mix all of the below ingredients:
Cooked Lentils (I use pre-cooked from Trader Joes)
Organic Garbanzo Beans
Chopped Green Onions
Halved Organic Plum Tomatoes
