Kale Quinoa Salad

I love kale, I love quinoa, and I love this salad. Something about the sweetness of grapes with the pepper, lemon zest. and creaminess of the cheese make this salad a hit. Not to mention Kale + Quinoa = major health benefits. 

To Make:
4 cups Organic kale, washed and chopped (make sure it's organic -- kale has quickly become a vegetable with the highest pesticides)
1/2 cup cooked Quinoa
Sunflower seeds
Diced red bell pepper
Halved seedless  red grapes
Parmesan Cheese

Olive Oil

As always, I'm not big on measurements so use your judgement. For the dressing, we want about 2/3 part olive oil and 1/3 part lemon. Start by using your hands to massage the dressing into the kale. Raw kale can be hard on the digestive system, do make sure you soften it up a bit. From there combine all the above ingredients and you are good to go! Easy, breezy and seriously, a fab combination.
