No Prep Chicken Curry Salad (Thank you TJ's!)

I know I totally dropped the ball on my promise to start featuring TJ's easy prep recipes. But, better late than never right? Today I share with you a delicious, one of a kind salad that I make all the time with Trader Joe's ingredients. I know a lot of people don't like curry and if that's the case then this dish really isn't going to be your cup of tea. With that being said, I love this salad and so does my hubby. As the title mentions, it requires no preparation from you, yet it's fresh and healthy.


Ingredients: 

One Lime
One package of Trader Joe's Curried White Chicken Deli Salad
One package of Pomegranate Seeds
Hand full of Cilantro
One Lime
One Package of Organic Spinach
Splash of Olive Oil

To Make: 
Divide the spinach evenly onto two or three plates (If you're just making it for yourself, grab a hand full). From there evenly spoon the chicken curry on top of the plates. It should be 1-2 big spoonfuls per dish. Sprinkle the pomegranate seeds on top. Use your hands to tear the cilantro into tiny pieces ( I promise that's the only real work). Place about a palm full of cilantro on top of each dish and one whole leaf as a garnish on top. From there squeeze a slice of lime on top of the salads and drizzle a little of your favorite olive oil. Voila!

This will serve about 2-3 people and you can always serve this in a large bowl instead of plating it individually. It's a great dish for a luncheon or shower or bring the ingredients to work with you for a healthy meal on the go.  Happy eating, babes xo
