The Amazing Egg & How to Scramble them Like Grandma


It may seem silly to post about how to make eggs, I mean, can't a 6 year old scramble an egg? I took offense when my husband told me that the best thing I know how to cook is scrambled eggs but I realized, there are so many ways to cook an egg and sometimes it's the simplest things that can get the most screwed up. After all, all eggs are not created equal!

Loaded with healthy B-Vitamins, which are proven to boost "happy" hormones and increase fetal brain development (super plus if you're expecting!) eggs are also one of the most complete and easily digestible forms of protein. And don't forget the yolk… despite what you may have heard, it's actually the most nutritional part of the egg!

Ingredients: 
Organic, Cage- Free Eggs
Coconut Oil

To Make: 
On medium high heat, lightly coat a small frying pan (or larger size if you're making more than 4 eggs) with coconut oil. Crack eggs into a separate bowl and whisk with a fork until the yolk and white are completely scrambled. Pour eggs onto heated pan and when they become white at the bottom (you can't see through them anymore) take a wooden spoon and clean the edges of the pan, pushing the eggs toward the center. Continue "pushing" eggs toward the center of the pan until they are no longer runny.  Once the eggs are solid, stir quickly once more and serve while hot. 

Tips: 
Don't stir the eggs once they are in the pan. Eggs should look "velvety" and soft when ready. Make sure you don't over cook or they will be rubbery. Add salt and pepper if you like...
